Norm's Recipes
(By the way we take suggestions for the recipe of the month.)1. February 2006
Almost Instant Chicken and Dumplings.This recipe takes minutes to prepare and less than a half hour to cook. Feeds four and makes great microwave leftovers.
Ingredients:
1 Pre-cooked chicken from Wal-Mart or where ever. Pick off all meat and put to one side
1 can of chicken broth
1 can of chicken gravy
1 onion, chopped
1 t parsley & Italian seasoning
1 t thyme
1 t Tabasco sauce (You won't even know it’s there.)
1 cup frozen peas and carrots
1 can of store biscuits, large size.For one dish cooking take a good size Corning dish with a cover, we use 1 ½ quart. Cook up the onion in butter. When cooked, add broth and gravy. Dump in chicken and all spices. Add peas and carrots. Bring to a light boil.
Open a can of biscuits, cut each biscuit in to thirds. Place biscuits on top of chicken mixture. Cook uncovered for 10 minutes and covered for ten minutes at a soft boil. This meal can be served alone or over noodles or rice.

Bounder French Toast1 loaf of Italian Bread sliced length wise
8 oz cream cheese, microwave softened, 15 seconds
Raspberry jam or your favorite jam
Chopped walnuts or pecansSpread crème cheese on both surfaces of the bread. Spread jam on bottom layer. Sprinkle nuts on jam. Put top on bottom. Slice about 3/4 inch thick.
French toast dip.
2 eggs
2 T milk
1 t cinnamon
1 T sugar
1 t vanilla.Combine all ingredients and mix using a fork. Dip slices and fry in a hot pan with a little oil until golden brown on each side. Sweet enough to serve without syrup.

Easy Strawberry Torte8 ounces Cream Cheese, softened
¾ Cup of white sugar, can use Splenda
2 teaspoons vanilla
1 pint heavy whipping cream
1 Tablespoon confectioner’s sugar
2 12 ounce packages of lady fingers
1 16 ounce package of fresh or frozen strawberries.1. Strain Strawberries and set aside or cut up fresh strawberries.
2. Whip Cream cheese and sugar and vanilla. You may want to adjust the amount of sugar to taste, particularly if using Splenda.
3. In a separate bowl beat whipping cream with a tablespoon of confectioner’s sugar. Fold whipped cream into cream cheese. Mash Strawberries a little and also fold in. Some can be saved for decorating the top.
4. Arrange Ladyfingers around 8 inch square pan and over bottom. Refrigerate. If you have one with you use a spring form pan for a cuter dessert.

Great EnchiladasThis is an easy to make, very tasty recipe.
To making the filling:
4 Chicken boneless chicken thighs
1 Onion Chopped
1 15 oz can chopped tomatoes
1 Green Pepper Chopped
1 tablespoon chili powder
1 teaspoon chopped garlic
½ teaspoon oregano
1 8 ounce container of sour cream
1 Cup cheddar cheeseTo form the enchiladas
10 soft tortilla shells, 10 inch
¾ cup Cheddar Cheese
1 jar of medium salsaPreparation:
Lightly sauté onions and peppers. Set aside.
Brown chicken in oil and cut into cubes.
Add onions and peppers to chicken.
Add tomatoes, spices, sour cream and cheddar cheese. Warm until cheese melts.To form Enchiladas.
Preheat oven to 375.
Stuff and roll each tortilla shell. Place in a baking dish.
Cover with salsa and cheese.
Bake for 15 minutes, broil if you like for an additional 2 minutes.We make the sauce and keep it in a container in the refridge, making enchiladas as needed. As well this sauce could be served over rice topped with salsa and cheese.

Chocolate Hazelnut Tort1 T butter
1 C chopped hazelnuts
½ C melted butter
1 C finely copped hazelnuts
5 eggs
3 Packages Chocolate Fudge Instant PuddingPreheat oven to 325
Spread 1 C of hazelnuts on the bottom of a buttered 10 inch springform pan.
Combine 1C of hazelnuts, 5 eggs pudding and melted butter in a bowl and beat until mixed.
Pour into pan and bake for 20 minutes until the outside edges are firm and center jiggles. Remove and cool for 10 minutes. Sprinkle with confectioner’s sugar and cocoa.6. August 2006
Bounder Food, quick and good
Pork Tenderloin.A tender cut, perfect for two or three, not messy and quick.
Marinate the pork for a couple of hours in a plastic bag with the following ingredients:
2 T Soy sauce
2 T Sesame Oil
2 T honey
2 T Balsamic Vinegar
1 T Brown or any sugar
1 T chopped GarlicGrill on a hot grill until pork reaches 150-160 degrees about 15 to 20 minutes. Occasionally rotate and baste with remaining marinate.

Stuffed Chicken, serves four.

Ingredients1 14oz can Italian style diced tomatoes
1 C of Mozzarella cheese, grated
1 C fresh Basil
2 Boneless Chicken breasts
1 6 oz package of stuffing mix
½ C of Italian dressing or a dressing of your choice.Preheat oven to 350. Combine tomatoes with liquid, ½ C of the cheese, the basil and stuffing, stir until moistened, add more liquid if dressing is dry.
Slice each breast lengthwise to create two thinner pieces per breast. Pound breasts between Saran wrap if still too thick, they should be about ¼ inch thick. Spread each breast with stuffing mixture and roll up beginning at narrow end of breast. Place chicken on baking dish seam side down. Excess dressing can be placed in bowl with chicken pieces. There is enough stuffing to do twice the amount of chicken. Drizzle chicken with a little dressing. Bake for about 30 minutes. At the end of the time remove dish and sprinkle with balance of cheese and cook for 5 more minutes or until chicken is done.

Six Can Chicken Tortilla Soup.This is one of my son’s recipes for a quick and tasty soup that can be made from 6 canned ingredients. Serve over crumbled Tortilla chips and sprinkle with Cheddar Cheese.
1 15oz can whole kernel corn
1 15oz can of black beans
1 10 oz can of diced tomatoes with green chile peppers
2 14 oz cans of chicken broth
1 10 oz can of chunk chicken (of course non-can cooked chicken can be used)Pour everything into a large pot and simmer until chicken is warmed. Serve over chips and sprinkle with cheddar cheese.
